Loco Moco
Loco Moco – Original Recipe from Hawaii
Hearty Hawaiian classic with juicy beef patties, rich gravy, fried egg, and rice – serves 4.
Ingredients:
For the Gravy
- 1 onion (or 2 shallots)
 - 1 garlic clove
 - 30 g butter
 - 20 g all-purpose flour
 - 400 ml beef broth
 - 3 tsp Worcestershire sauce
 - 1 tsp salt (to taste)
 - ½ tsp freshly ground black pepper (to taste)
 
For the Patties
- 500 g ground beef
 - 1 egg (medium)
 - 1 tsp salt
 - ½ tsp freshly ground black pepper
 - 1 tbsp peanut oil (for frying the patties)
 
Additionally
- 300 g long grain rice
 - 1 tsp salt (for cooking water)
 - 1 scallion (for garnish, finely sliced)
 - 4 eggs (medium, fried sunny-side up)
 - 2 tbsp peanut oil (for frying the eggs)
 
Preparation:
- 1. Cook rice with 1 tsp salt according to package instructions and set aside.
 - 2. Finely chop the onion and garlic.
 - 3. For the gravy, melt butter in a saucepan, sauté onion and garlic until translucent.
 - 4. Stir in flour and cook briefly. Gradually add beef broth while stirring constantly until the sauce thickens.
 - 5. Add Worcestershire sauce, salt, and pepper. Keep warm.
 - 6. For the patties, mix ground beef with egg, salt, and pepper. Shape into 4 equal patties.
 - 7. Heat peanut oil in a pan and fry patties over medium heat for about 4–5 minutes per side until cooked through.
 - 8. In another pan, heat 2 tbsp peanut oil and fry eggs sunny-side up.
 - 9. Divide rice among plates, place patties on top, and pour over the gravy.
 - 10. Top each patty with a fried egg, garnish with sliced scallions, and serve.
