Chow Mein
Chow Mein – Aromatic Wok Noodles
A quick and flavorful dish: tender chicken strips & crisp vegetables in a savory sauce – ideal for 2 people.
Ingredients:
Meat & Marinade
- 100 g chicken (boneless and skinless), thinly sliced
 - 1 tsp egg white, lightly beaten
 - 1 tsp cornstarch
 
Vegetables
- 50 g snow peas, thinly sliced
 - 1 head pak choi, sliced
 - 1 small carrot or ½ red bell pepper, julienned
 - 2 spring onions, sliced into rings
 
Seasoning & Sauce
- 1 tsp light soy sauce
 - 1 tsp dark soy sauce
 - 1 tsp sugar
 - 1 tbsp oyster sauce
 - 1 tsp mirin
 - 1 tsp sesame oil
 
Noodles
- 200 g fresh egg noodles or 150 g dried, cooked
 
Preparation:
- 1. Coat chicken in egg white and starch, then set aside.
 - 2. Cut vegetables as desired, mix the sauce, and set aside the green parts of the spring onions.
 - 3. Poach chicken in boiling water for about 45 seconds until just white on the outside, then drain.
 - 4. Cook noodles according to package instructions, drain, and mix with 1 tsp sesame oil.
 - 5. Heat oil in a wok over high heat. Stir-fry vegetables (except spring onion greens) for 30 seconds. Add chicken and stir-fry for 2 more minutes.
 - 6. Add noodles and sauce, stir for about 1 minute until everything is hot and well coated.
 - 7. Finish with a splash of sesame oil and spring onion greens, then serve immediately.
