Nasi Goreng
Nasi Goreng – Indonesian Fried Rice
A classic Indonesian rice dish with aromatic spices, perfect for 4 people. Best prepared with day-old rice.
Ingredients:
- 1 shallot
 - 1 garlic clove
 - 1 red chili, deseeded
 - ½ tsp toasted belacan or terasi (fermented shrimp paste)
 - ½ tsp palm sugar
 - ½ tbsp kecap manis (sweet soy sauce)
 - 250 g cooked rice (preferably from the day before)
 - 2 tbsp oil
 - 1 fried egg, cooked through (for serving)
 
Preparation:
- 1. Roughly chop the shallot, garlic, and chili. Use a mortar or blender to grind together with belacan (or terasi) into a smooth paste.
 - 2. Heat the oil in a pan. Sauté the spice paste over medium heat for about 2 minutes until fragrant.
 - 3. Stir in the palm sugar and kecap manis.
 - 4. Add the pre-cooked rice and mix thoroughly so it’s evenly coated with the spice paste. Stir-fry well.
 - 5. Serve the hot rice with a fried egg on top.
