Hummus
Hummus – Chickpea Purée with Tahini
A creamy classic of Middle Eastern cuisine – ideal as a dip, spread, or side. Serves 1 portion.
Ingredients:
- 1 can chickpeas (approx. 400–500 g)
 - 2 tbsp tahini
 - Juice of 3 lemons
 - 4 garlic cloves (pressed)
 - Neutral, mild oil as needed
 - 2 tbsp ground cumin (or more to taste)
 - 1 dried hot chili pepper (finely chopped)
 - 1 tbsp curry powder
 - Salt and white pepper to taste
 - Optional: hot paprika powder
 - 1 bunch parsley for garnish
 
Preparation:
- 1. Drain and rinse the chickpeas in a sieve.
 - 2. Blend chickpeas with tahini, lemon juice, garlic, cumin, chili, and curry powder until smooth using a blender or immersion blender.
 - 3. Gradually add oil as needed to reach a creamy consistency.
 - 4. Season with salt and white pepper. Optionally mix in or sprinkle with paprika powder.
 - 5. Transfer to a bowl, garnish with chopped parsley, and drizzle with oil if desired.
 
Serve hummus with flatbread, veggie sticks, or as a flavorful side to Middle Eastern dishes.
